Shortly i am going to pull the head off my 31 chevrolet. When i reinstal it i need to know how much i have to torque the bolts and in which order i have to do it.

The tightening order is shown in your 1931 shop manual.

If you are using original bolts, torque them to no more than 50 or 60 pounds each, and I would suggest doing that in several steps.
