Hi. I have a 35 truck with a tired 207. I have the opportunity to purchase a 37 truck 216 cheap. 207 parts for a rebuild a almost non existent..216 parts are more available. Is a 207 to 216 swap doable and somewhat easy For a truck or is it a can of worms???

I can be and has been done many times. It is not a bolt in deal.
I have a friend in Indiana who did it. I'm sure he would be glad to talk to you.

I done it to my 35 master deluxe. I swap it with a 235. Bellhousing, throw out fork, throw out bearing, would need to be replaced. A 207 bellhousing will not mount up to a 216 or 235. Also you will need to make new front and rear motor mounts. If you pm me I can send you a YouTube video, that shows you how a guy swap a 207 to a 216 on a 34. This is how I learned how to do it
