Are the gaskets alone good enough to prevent leaks on the differential carrier and the differential cover, or should I use some type of sealant also. Thanks.

i use just the cork gasket and no issues here
if uncertain i would apply a skim coat of permatex #2

I used Permatex Aviation on both sides of the gasket. It's just a little extra and prevents that "dirty line" along the edge of the gasket.
I seldom use silicone any more unless I think there may actually be a small gap to fill.
