I'm in the process of installing a inline 6 engine, T5 trans and a 10 bolt differential into my 1928 chevy truck. I would like to maintain the look of the wooden spoked wheels. Does anyone have any suggestion how to adapt the 8 lug wheels onto a more modern 5 lug rear axel ?

Just tossing this out there, but I'd be concerned about the rear wood spoked wheels failing under torque, in particular, the tires coming loose from the steel rims around the wood spokes.

Heavier trucks used steel artillery wheels . Same look in iron .
