According to my Master Parts Price List for all the four cylinder Chevys, if your wheel has wood spokes, the rear hub bolt is is a 3/8"-16 x 1 15/16" bolt (3/8 inch in diameter, 16 threads per inch (TPI) and 1 15/16 inches long). On my '28 AB Canopy Express (which is a 1/2 ton truck built on a car chassis), these bolts are carriage bolts. The hub has a square hole that the bolt head goes into. My truck has wooden spokes.
The book does not mention the strength (grade) of the bolt, but I would think that the stronger the better.
The book also does not mention the size of the bolt if you have disc wheels. It does mention, however, the size of the acorn nut that goes onto that bolt and the thread size for the nut is 7/16-20, so that is a clue.
New carriage bolts might have a different shape to the head than the old ones. But, I suspect that you can grind the new heads to match the old one's shape if you have an old one to guide you.
