Will the exhaust manifold from a 1938 Chevy 216 fit on a 1951 Chevy truck 216?

I think all the 216 manifolds were the same fitting to the head but may have a different exhaust pipe angle though that isnt hard to adjust with a pipe cutter and welder on the pipe. Tony

Does your truck still have splash/dust pans on each side between the engine and frame? If it does, and you want to keep them, you won't be able to use the earlier manifold due to the outlet angle Tony mentions above. Otherwise, as Tony says, just a change in the plumbing.
