If by restoring your car means "restoring it to original" and it is a Impala 4 door (post 4 door-not a 4 door hardtop) the seats will be part cloth and part vinyl. If its a 4 door hardtop the cloth and vinyl was standard and all vinyl an option.Leather was not used in those years.

Then it will be your choice but as I stated all vinyl was not available in the 4 door post sedan. If your keeping the car 100% original cloth and vinyl would be the correct choice.

thanks pump jockey. we are not going to restore it back to 100% orginal. we were thinking of making a cruiser, and by making it comfortable to drive, upgrading the power train. we are going to make a 327 325 to about 350 horse, and putting a 700R4 and lower rear end. by the way do you know any/ body that could give us some tips about a 1967 chevy impala 4 door hardtop?since every body likes 2 doors we are having difficulty finding interior parts.
