Does anyone know the head bolt tork spec for 1927 LM truck?

Before you torque down the head bolts, make sure that none of them are stretched. If a bolt is stretched, it could mess up the threads in the block and might break off as you tighten it down.

As per the thread below, torque the bolts to 55-60 Ft Lbs. if new Bolts. Old bolts = 50-55 Ft Lbs. Also, I think the shop manual talks about the order in which you tighten the bolts.
