Just so you know, there are no detailed assembly instructions on how assemble a 1927 Chevrolet. Not a 1928, or 1929, or 1930, or .... well you get the drift.

You didn't mention which body style, so that prevents a specific answer.

Now... having said that, here's something that get you started....

What body style are you looking for?

When I was looking for wood assembly information for the '27 coupe, that I am assembling, I was able to get some information for the coupe. I would be willing to share if you are looking for coupe assembly. I plan to be taking some photos today of the "wood skeleton" of my 1927 coupe today.

The Fisher Body Service Manual 1926 - 1932 - All Closed Body has some info and instructions worth looking at.

The 1926-32 Fisher Body Service Manual is well worth getting since it contains a lot of great information about body construction and etc. The book is available in reprint from several suppliers including the Filling Station, www.fillingstation.com
