Anyone: I am new to the early 30s Chevrolets...found a 32 in a barn that I still regret selling...can anyone tell me when chevy switched from wood to 'all steel'? What year did that occur?

Wood was replaced with all steel in mid '36

The 1936 Standard switched to steel doors in mid 1936 but the rest of the body still contained a lot of wood.
The 1937 bodies were the first to be completely steel.

The Aus built 38 trucks had a steel cab with some small wood pieces around the door openings for trim attachment and wood framed doors. This may well differ from the US built trucks.

My '36 truck (late) has the new steel frame doors and "C" channel around the back of the cab to prevent load from shoving through. The rest is wood. My '36 Standard, Town Sedan (Late) has steel door post and steel under the windshield; steel in the doors. From the door latch post on back is wood. Full all steel came in in 1937. The later 1/2 of 1936 is the starting of placing steel. Early 1936 has all wood.

acually the 1954 belair hard top had some wood . hope this helps

Sorry but I can not think of a single wood structal part used in a 1949-1954 body.
