I think you will find that various hardwoods were used depending on the factory location. My 32 was built in Tarrytown N.Y. and had maple, poplar and ash in various places.

After a lot of reading on the subject I decided that northern ash was an excellent wood to use for re-wooding my 35 chev roadster. I delibertately selected wood with dark parterns running thru it.

It cut nicely, by hand saw or preferably band saw. I was able to shave the wood with wood chisels and hand planers. It sanded nicely. It also planed easily to the thickness. I coated mine with Epifane varnish from Holland. its the preferred varnish of boat builders and considered the best. Its also about $50 a litre and the thinner is $18. Use quality naturel bristle brushes to apply.

sqtubing: From what has been posted on this site in the past, it seems that what ever the local wood near the factory was used. Could have been ash, hockory, maple, pine etc.
