The oil pressure line that runs from the block to the Gage on three of four engines is 1/4 inch. The other is 1/8th inch. I have been told it should be 1/8 and I believe that to be true.
If it was so popular to convert over --- what is the difference in the oil pressure reading between the two lines?

There should be no difference in the pressure in the lines. The pressure is determined by the oil pump and bearing clearances.
