Just started my 30 after its 52 year nap. runs very well and after its short run time i should probably dump the oil out to rid itself of all the contaminents.I did fill it with fresh but i figured a good rinse cant hurt. 20w has been mentioned and 30w non detergent.

I use 10W30 in our '31. Been driving it since 1965. No problems. I used straight 30W non Detergent about the first 10 years then switched to 10W30 detergent.

10W30 detergent would be your oil of choice.

I would drop the oil pan and scrape out the gunk before doing anything.

I did remove the pan and replaced the oil pump. Removed distributer and primed engine until oil came out of th rocker shafts. I filled it with 15-40. Is very quiet and oil pressure is good but I think would like some lighter oil and maybe some marvel mystery oil.

10-4 on scraping out the sludge. i just did this on my '31 on the advice of those on this forum. also cleaned the "valleys" that oil the main bearings. the rocker arm tube needed cleaned as well. filled it with 10w-30 and for some reason my oil pressure on start up was 17 psi. i would guess it will be lower once warm but before the cleaning it was not even half this. was about 1/2" of "goo" in the bottom of the oil pan, maybe fill a quart jar. this is with 45,000 on the odometer. felt wicks needed replaced as well.

On my old worn out engine(33,000 rough dusty miles) I was using 20W-50 to maintain decent oil pressure. With my rebuilt engine I am running standard detergent 10W-30 oil.
Marvel mystery oil thins down the oil, I have been down that road before. It is very good for upper cylinder lube when used in the gas tank.
