The only 31 clock that requires a crystal is a dash clock Bill.
Back to the question. Finding an exact match as far as shape of the original crystal is virtually impossible. The size is no problem if you don't care what the shape is. The size is 50mm. As far as the shape (convextivity), you want a hunter case pocket watch crystal. A regular pocket watch crystal will have a higher dome profile.
New hands are not available. I could make some from scratch but it would be cheaper to buy a 31 parts clock.
