This subject comes up periodically and deserves reviewing. The general consensus has been that the factories used whatever suitable hardwood was available in the local area. Typical choices were white oak, red oak, ash, hickory, etc. For the West Coast I have found suitable white oak at Central Valley Hardwood, Lamont, CA and Spar Marine Lumber, Long Beach, CA. The wood is clear, free of knots and for the amount needed not all that expensive.
Quality power tools are required and I try to duplicate the original joinery. Generally speaking you should USE NO GLUE.
