I am new to the forum, and have a question about my new to me 1931 Chev.
The motor has been rebuilt a while ago, and I seem to accelerate fine in 1st and 2nd gear. When I get into 3rd, though, the acceleration isn't near as good, and the maximum speed I can get is 35 mph, maybe 37 down a hill. What would be the first things to check?

Check the linkage and insure it opens the throttle to full open.

If it passes that test you have a laundry list to go through, timing, point gap, adjustment of the valves, ect.

Welcome to Chevy Chatter! Lots of information can be had here, just have to ask. As to your '31, here is a great site (set up by Bill Barker, webmaster extraordinaire for Chevy Chatter) with loads of info about the 1931 Chevrolet:

About mid way down on the home page are specs and info for the motor, drivetrain, brakes, body, accessories, etc.
You should also get a copy of the owners manual and repair manual for your car. These can be found at The Filling Station:

If your throttle linkage is ok, then, as Ray suggested, check the ignition system; timing, plug gap, point gap, and adjust to the newer specs as indicated on the 1931chevrolet site. You should also check for brakes dragging and proper wheel bearing lubrication. Have fun with your new acquisiton.
