what wood was used for the frame and roof of a 1927 chevy, they look different.

The frame looks like burch, the roof 2" x 1/4" look like redwoor??

is the black coating on the perimeter just paint over spray (over brush) or is it a type of wood preservative??

Hardwood was used. It ranged from poplar, birch to oak, maple, etc. The particular wood used in non-structural pieces was what ever was available. So you typically will find several different varieties with no apparent plan or specification. In fact you will also find some pine or softwood even if the specifications were "hardwood".
