I have 1950 Chevy Styleline Deluxe I currently have a soft brake pedal. If open the reservoir to see if I need brake fliud do I have to bleed my brakes once I close the brake reservoir?

You dont need to bleed the brake system until you open the system after the master cylinder outlet or the reserviour empties in operation. Your description of "soft pedal" makes me suspect the reserviour has emptied, the main cause of this is a leak so check the system for any dampness including inside the brake drums and at the pedal end of the master cylinder.
