can the stock 6-volt components of a 50 speedo cluster gas gauge and ammeter be used on a 12-volt system or do they need a voltage dropper thanks

Any light globes (Charge light, oil press light, beam indicator, turn lights and illumination lights) would need to be changed but I think the rest would be fine with either 12 or 6 volts as they operate by flow not volts.

The gas gauge probably needs a dropper. The sender would be fine as is.

Ammeters measure only current and don't care what the voltage is. If the new charging system is capable of significantly more current (amps), the ammeter may peg too easily. A short bare copper wire on the back (soldered to ring terminals for a perfect connection) will carry part of the current. Try bigger and smaller wire (of exactly the same short length) until it does what you want. Bigger wire = less needle swing.
