I have been tinkering with a 31 chevy that has wiring that is rotted and has lots of bare wire showing. Today I while the car was running I noticed wires were arcing around the generator so I unhooked them, then I read that is not a good thing to do. I was wondering what to do so that I can run the engine and not damage the generator. Thanks

Run a line from the generator cut-out directly to the positive terminal on the battery. Or if the line from the batter to the ammeter is okay then you can run the line to the opposite terminal on the ammeter. That way you can view the generator output.
